Mom's Zucchini Bread

If you have never tried zucchini bread I suggest you try out this recipe! I think it is delish :)

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Slowly Winding Summer Down

It may be hard to accept... but summer is slowly beginning to wind down. Before we all begin to run madly towards the hills in fear of books, clinicals, college parking and freaky professors, let us dwell on how awesome these last few weeks of summer have been.

Youth Camp 2012: Identity

 

 I love youth camp! It amazes me how every year is different from the last. It is inevitable for older youth to grow up, get married and younger youth to take their place. Seeing different faces each year makes me genuinely happy, because I know they will get a glance of the Lord.

 During our free time we gathered for games, such as mafia which is shown above. Lol Lesya is trying to defend herself because the group thought she was the mafia (check out Lesya's blog here). It makes me giggle to see Alex there in the middle, the true mafia, quietly and "innocently" watching.

Camp was more than just games though. Our church services were blessed. Here is the paper shredder, it looks a bit silly with a shirt on it, but this paper shredder was part of an awesome exercise we did. On some paper we wrote down all the lies we have told ourselves over the years, the lies that Satan often whispers into our ears. It was difficult to open up and start writing but once I wrote down the first lie "You are not good enough.", the rest flowed from my hand freely. Then I had the opportunity to go up to the front and place this paper into the shredder. The red shirt represented the blood of Christ, in Him we are new creatures, no longer do those lies affect us. We have victory in Him! He shredded our sins and made us His 2,000 years ago when He died on the cross of Calvary. 

Identity: the state or fact of remaining the same one or ones, as under varying aspects or conditions.

 Our identity is in Christ. No matter my situation, or emotion I remain in Him. Don't you love that?

Overwhelmed


It has been a very eventful few weeks ever since getting back from Russia.  This past weekend, we had a "Buryatia Family Reunion" and I know we all loved it. One moment that I do not want to forget was staying up with Mia when we were in Cleavland, we really got to talk about God. Those kind of friendships are precious, the ones where you simply serve one another in encouragement and prayer. I am blessed to have several of such friends in my life, not only from my Buryatia family, but my beloved Rochester family as well. Anyway, after we talked she left to take a shower and I got to have some time alone. It was such a blessing to feel the presence of God. Then randomly this song turned on and it perfectly described what I was feeling.

This is my desire


I want to make the most of my time here on earth.

I do not want to sit around and feel sorry for myself, for someone else or for my or their situation.

I want to take action, have joy, be different.

I do not want to do the same things all the time, with the same people, in the same comfort zone.

I want my thoughts to revolve around You, not me, not others.

I do not want to compare myself to others, comparing my weakness.

I want to be quick to listen, slow to speak, slow to anger.

I want to be bold, full of Your love, ready to stand when I stumble.

I want to be humble, simple and ready for Your coming at all times.

I want to want You more.
